Does water damaged plasterboard need to be replaced

Usually water damaged plasterboard will need to be replaced.

Why is Gyproc plasterboard supplied in 1200mm wide sheets?

Plasterboard generally comes in 1200mm wide sheets as it is designed to suit the standard 600mm stud spacing used in housing today.
